Black Bean Spread
 
 
Ingredients
  • ¾ cup black beans
  • ½ teaspoon ground cumin
  • ½ teaspoon ground cayenne
  • pinch of chili flakes
  • ½ lime
  • 1 tablespoon cilantro, chopped finely
Instructions
  1. Rinse black beans under cold water. Place into a bowl.
  2. Mix in spices and lime juice.
  3. Mash beans with a fork until it is the consistency of a paste. If the mixture seems too dry, add some more lime juice.
  4. Mix in chopped cilantro. Set aside until assembly of tacos.
Notes
After the black bean spread, I move on to make the Salsa. It is almost impossible for me to eat commercially prepared salsa and enjoy it now that I know I can make this salsa within minutes. It has that fresh, light, taste that prepared salsa lacks. It also has no preservatives, is low in sodium, contains no sugar, and one bite brings me back to the shores of Mexico!
